Al Dente, literally "on the tooth", indicates a firmness of pasta texture, which is symptomatic of freshly cooked pasta. Al Dente serves pure Italian food, unadulterated by cream or pre-cooked pasta, always fresh and delicious. Both the food and surroundings are authentic of what one would expect in a traditional Italian restaurant.
You are sure of a warm welcome at Al Dente, from your host Graziano Spano. Born and bred in Bari, on Italy’s Adriatic coast, Graziano has over ten years’ experience in the hospitality industry, including a period in the Danieli Excelsior, Venice’s fine 5 star hotel, before moving to Edinburgh.
